Baked Pears with Brie, Walnuts, and Cranberries

A cozy and elegant dessert or appetizer featuring roasted pears filled with creamy brie, crunchy walnuts, and tart cranberries.

Ingredients

  • 4 firm but ripe pears (Bosc or Anjou)
  • 4 oz (about 120 g) brie, rind left on or off as preferred
  • 1/3 cup chopped walnuts, toasted
  • 1/4 cup dried cranberries
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon lemon juice and a little zest (optional)
  • Pinch of salt and fresh ground black pepper
  • A few sprigs of thyme or rosemary for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Wash pears, cut in half lengthwise, and use a spoon to scoop a small cavity in the wide end to hold the cheese.
  3. Place pears cut-side up on a baking sheet lined with parchment.
  4. Toss walnuts in a dry pan over medium heat for 2–3 minutes until fragrant, then set aside.
  5. Spoon a portion of brie into each pear cavity, sprinkle with toasted walnuts and dried cranberries. Drizzle each pear with about 1/2 teaspoon honey or maple syrup and a few drops of lemon juice.
  6. Roast for 12–18 minutes, depending on pear firmness.
  7. Remove from oven, season lightly with salt and pepper, finish with lemon zest and fresh herbs if using, and serve warm.

Notes

For a savory version, skip the honey and cranberries and add flaky salt and fresh herbs. These pears can also be served as an appetizer or dessert.
