Ingredients

Scale
  • 2 ripe bananas, mashed (about 1 cup)
  • 2 cups old-fashioned rolled oats
  • 1 cup blueberries (fresh or frozen)
  • 1 1/2 cups milk (dairy or plant-based)
  • 1 large egg
  • 1/4 cup maple syrup or honey
  • 2 tablespoons melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine salt
  • Optional: 1/3 cup chopped nuts (walnuts or pecans), extra blueberries for topping

Instructions

  1. Heat the oven to 375°F (190°C). Grease an 8×8-inch baking dish.
  2. Mash the bananas until smooth. Whisk in milk, egg, maple syrup, melted butter, and vanilla.
  3. Mix oats, baking powder, cinnamon, and salt in a second bowl.
  4. Stir the dry mix into the wet mix until just combined. Do not overmix.
  5. Fold in blueberries and nuts (if using). Pour the batter into the dish and scatter a few extra berries on top.
  6. Bake at 375°F (190°C) for 35–40 minutes, until the center is set and the top is golden at the edges.
  7. Cool for 10 minutes. Slice and serve warm with milk, yogurt, or maple syrup.

Notes

For best texture, use rolled oats. Use very ripe bananas for added sweetness. If using frozen berries, add them frozen, do not thaw.
