A nutritious blend of creamy avocado and soft-boiled eggs served on toasted bread, perfect for breakfast or lunch.

  • 2 slices of your favorite bread (sourdough, whole wheat, etc.)
  • 1 ripe avocado
  • 2 eggs
  • Salt and pepper to taste
  • Optional toppings: red pepper flakes, olive oil, fresh herbs, or cherry tomatoes

Instructions

  1. Begin by boiling water in a saucepan. Gently add the eggs to the boiling water and cook for 6-7 minutes for soft-boiled eggs.
  2. While the eggs are cooking, toast your slices of bread to your desired crispness.
  3. Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork and season with salt and pepper.
  4. Once the eggs are done, remove them from the boiling water and rinse under cold water to stop the cooking process. Peel the shells carefully.
  5. Spread the mashed avocado evenly over the toasted bread.
  6. Slice the soft-boiled eggs in half and place them on top of the avocado toast. Sprinkle with extra salt, pepper, and any optional toppings.
  7. Serve immediately for the best taste and texture!

Notes

For perfect soft-boiled eggs, adjust the cooking time based on your stove and cookware. Store leftover mashed avocado in an airtight container to minimize browning.
