  • 2 slices of your favorite bread (whole wheat or gluten-free)
  • 100g feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts, chopped
  • Olive oil (for drizzling)
  • Salt and pepper to taste
  • Optional: crushed red pepper flakes or fresh herbs for garnish

Instructions

  1. Toast your bread slices until they’re golden brown and crispy.
  2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
  3. Mash the avocado with a fork, adding salt and pepper to taste.
  4. Spread the mashed avocado evenly onto each slice of toasted bread.
  5. Top the avocado with crumbled feta cheese, halved cherry tomatoes, dried cranberries, and chopped walnuts.
  6. Drizzle a bit of olive oil over the top for added flavor.
  7. Serve immediately, garnished with crushed red pepper flakes or fresh herbs if desired.

Notes

For the best texture, choose ripe avocados that are not overly soft. Store any leftovers in an airtight container with the avocado separate to prevent browning.
