  • 2 Chicken breasts (or thighs)
  • 2 tablespoons Olive oil
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 2 Carrots, diced
  • 2 Celery stalks, diced
  • 1 tablespoon Fresh ginger, grated
  • 1 teaspoon Turmeric
  • 4 cups Chicken broth
  • Salt and pepper to taste
  • 1 tablespoon Lemon juice
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and sauté until translucent.
  3. Stir in minced garlic, grated ginger, and turmeric; cook for an additional minute until fragrant.
  4. Add diced carrots and celery, and cook for a few more minutes.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the chicken pieces and cook until they are no longer pink and tender.
  7. Season with salt, pepper, and a squeeze of lemon juice.
  8. Garnish with chopped parsley before serving.

Notes

Using a rotisserie chicken can cut down on cooking time. Store leftovers in airtight containers for up to 4 days or freeze for up to 2 months. Reheat slowly on the stovetop or in the microwave.
