Healthy and delicious almond butter pumpkin protein balls, perfect for a snack or post-workout boost.

Ingredients

  • 1 cup almond butter
  • 1 cup pumpkin puree
  • 1/2 cup oats
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • A pinch of salt
  • Optional: chocolate chips or nuts for extra crunch

Instructions

  1. In a large bowl, combine almond butter, pumpkin puree, oats, honey or maple syrup, cinnamon, and salt.
  2. Mix until all ingredients are well combined.
  3. If adding chocolate chips or nuts, fold them in now.
  4. Chill the mixture in the refrigerator for about 30 minutes for easier rolling.
  5. Once chilled, scoop out small portions and roll them into balls.
  6. Place the balls on a baking sheet lined with parchment paper and refrigerate until firm.

Notes

For a smoother texture, blend the mixture in a food processor. Store in an airtight container in the fridge for up to one week or freeze separated with parchment paper.
