  • 1 pound of chicken breast or thighs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 4 cups chicken broth
  • 1 teaspoon turmeric powder
  • 1 teaspoon black pepper
  • 2 cups spinach or kale
  • Salt to taste
  • Lemon wedges (for serving)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the garlic and ginger, cooking until fragrant.
  4. Add the chicken breast, broth, turmeric, and black pepper to the pot. Bring to a simmer.
  5. Cook for about 15-20 minutes or until the chicken is cooked through.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Stir in the spinach or kale and let it wilt.
  8. Season with salt and serve with lemon wedges on the side.

Notes

Using a sharp chef’s knife will help you chop the onions and garlic quickly. Make sure your soup simmers gently to avoid overcooking the chicken, which can make it tough.
