Ingredients

  • 1 cup lentils (green or brown)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla chips for garnish
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and cook until translucent (about 5 minutes).
  3. Stir in the minced garlic and bell pepper, cooking for another 3 minutes.
  4. Add the lentils, vegetable broth, diced tomatoes, cumin, chili powder, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 25-30 minutes, or until the lentils are tender.
  6. Taste and adjust seasoning as needed.
  7. Serve hot, topped with tortilla chips and fresh cilantro.

Notes

For a bit of extra creaminess, feel free to add in some diced avocado right before serving.
