A cozy and flavorful slow cooker beef roast made with three simple seasoning packets and hearty vegetables perfect for busy weeknights or comforting weekend dinners.
3–4 lb beef chuck or round roast
1 packet ranch dressing mix
1 packet onion soup mix
1 packet brown gravy mix
1 cup beef broth
4–6 carrots, chopped
4–6 potatoes, diced
1 onion, quartered
Salt and pepper, to taste
1. Place the roast in the center of the slow cooker.
2. Mix the three packets together in a small bowl.
3. Sprinkle seasoning mix evenly over the roast.
4. Pour beef broth into the slow cooker.
5. Add carrots, potatoes, and onion around the roast.
6. Season with salt and pepper to taste.
7. Cover and cook on low for 8–10 hours or high for 4–6 hours.
8. Shred the roast with forks and serve with veggies and gravy.
If you want a thicker gravy, mix 1 tablespoon cornstarch with 2 tablespoons water and stir it into the slow cooker during the final 30 minutes of cooking.
Leftover roast is excellent for sandwiches, hash, or wraps.
