Delicious stuffed sweet potatoes filled with spinach, avocado, mushrooms, and feta cheese, perfect for a hearty meal.

Ingredients

  • 4 medium sweet potatoes
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 avocado, diced
  • 1 cup feta cheese, crumbled
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and pierce them with a fork a few times.
  3. Place the sweet potatoes on a baking sheet and bake for 45-50 minutes, or until tender.
  4. While the sweet potatoes are baking, heat olive oil in a skillet over medium heat. Add the sliced mushrooms and sauté until soft.
  5. Add the fresh spinach to the skillet and cook until wilted, about 2 minutes. Season with salt and pepper.
  6. Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes. Cut them open and fluff the insides with a fork.
  7. Combine the spinach and mushroom mixture with diced avocado and crumbled feta. Fill each sweet potato with this savory mixture and serve warm.

Notes

For a vegan option, replace feta with nutritional yeast or a plant-based cheese alternative.
