A hearty and comforting slow cooker hamburger soup loaded with ground beef, veggies, and pasta. Perfect for busy nights and cold weather!
1 pound ground beef
1 onion, diced
3 carrots, chopped
3 ribs celery, chopped
3 cloves garlic, minced
1 can (14.5 ounces) diced tomatoes, with juices
4 cups beef broth
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper, to taste
2 cups frozen mixed vegetables
1 cup elbow macaroni (optional)
Fresh parsley, for garnish
1. Brown the ground beef in a skillet over medium heat. Drain excess fat and transfer to the slow cooker.
2. In the same skillet, sauté onion, carrots, celery, and garlic until onions are translucent.
3. Add the sautéed vegetables, diced tomatoes with juices, and beef broth to the slow cooker. Stir to combine.
4. Add dried basil, oregano, and salt and pepper to taste.
5. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
6. About 30 minutes before serving, stir in frozen mixed vegetables and macaroni (if using). Cook until tender.
7. Taste and adjust seasoning if needed. Garnish with fresh parsley before serving.
For gluten-free version, skip the macaroni or use gluten-free pasta.
Make ahead and freeze in individual portions for easy weeknight dinners.
Adjust vegetables based on what you have — zucchini, green beans, or sweet potato all work well.
