Ingredients

  • 1 cup pumpkin puree
  • 1 cup rolled oats
  • 1/2 cup nut butter (peanut butter, almond butter, or sunflower seed butter)
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • A pinch of salt

Instructions

  1. In a mixing bowl, combine pumpkin puree, nut butter, honey, and vanilla extract. Mix until smooth.
  2. Add rolled oats, pumpkin pie spice, and salt. Stir until all ingredients are well combined.
  3. Using your hands, form small balls (about 1 inch in diameter) from the mixture.
  4. Place the balls on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm them up.
