  • 1 pound beef (chuck roast or stew meat)
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (optional)
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef over medium heat until it’s golden.
  2. Add onions and garlic, cooking until softened.
  3. Pour in the beef broth and add potatoes, carrots, celery, and tomatoes.
  4. Season with bay leaves, salt, and pepper.
  5. Bring to a boil, then reduce the heat and let it simmer for about 60-90 minutes until the beef is tender.
  6. Discard bay leaves before serving.

Notes

For a lighter option, use ground turkey or vegetable broth for a vegetarian version. Add a splash of Worcestershire sauce or red wine for extra flavor.
