A comforting and hearty soup made with tender lentils and soft potatoes, perfect for chilly evenings.

Ingredients

  • 1 cup lentils (green or brown)
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat a tablespoon of olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and garlic. Sauté until the onion becomes translucent.
  3. Stir in the diced potatoes and lentils.
  4. Pour in the broth and season with cumin, salt, and pepper.
  5. Bring to a boil, then reduce the heat and let it simmer for about 20-25 minutes or until the lentils and potatoes are tender.
  6. Adjust seasoning to taste before serving.

Notes

For a creamier texture, consider blending some of the soup. This soup is vegan-friendly and can be easily frozen for later.
