A comforting and nutritious soup made with tender red lentils, aromatic spices, and fresh vegetables, perfect for a quick meal.

Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 3 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: 1 tablespoon lemon juice

Instructions

  1. Set the Instant Pot to sauté function, heat olive oil, and add onion, carrots, and garlic. Sauté for 3-5 minutes until onions are translucent.
  2. Stir in red lentils, cumin, and turmeric; cook for another minute.
  3. Pour in vegetable broth and stir well, ensuring no lentils are sticking to the bottom.
  4. Close the lid and set to high pressure for 10 minutes; let pressure release naturally for 5 minutes, then do a quick release for remaining pressure.
  5. For a creamier texture, use an immersion blender to blend slightly.
  6. Taste and add salt, pepper, and lemon juice if desired before serving.

Notes

Store leftovers in an airtight container for up to 4 days or freeze in portions. Reheat with a splash of water or broth if thickened.
