Bright, flavorful sweet potatoes topped with creamy cottage-style topping, drizzled with spicy-sweet honey, and garnished with crunchy herbs.

  • 4 medium sweet potatoes, scrubbed
  • 1 cup cottage-style topping (drained slightly if very watery)
  • 3 tablespoons honey
  • 12 teaspoons chili flakes or a pinch of cayenne (adjust to taste)
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley or cilantro
  • Optional: toasted pumpkin seeds or chopped walnuts for crunch

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil.
  2. Slice each sweet potato in half lengthwise and brush cut sides with olive oil. Sprinkle with smoked paprika, salt, and pepper.
  3. Place cut-side down on the baking sheet and roast for 35–45 minutes, until tender when pierced with a fork.
  4. While potatoes roast, mix the cottage-style topping with lemon juice, a pinch of salt, and black pepper. Taste and adjust.
  5. Warm honey gently in a small pan with chili flakes for 1–2 minutes to infuse. Remove from heat and let sit for 2 minutes.
  6. When potatoes are done, flip them cut-side up and top each half with a generous spoonful of the cottage mixture. Drizzle hot honey over the top.
  7. Garnish with chopped herbs and seeds. Serve warm.

Notes

Choose sweet potatoes of similar size for even roasting. Warm honey slowly to avoid scorching.
