A comforting and hearty soup made with beef, fresh vegetables, and rich broth, perfect for chilly days.

Ingredients

  • 1 pound beef stew meat
  • 4 cups beef broth
  • 2 cups chopped vegetables (carrots, green beans, potatoes)
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional: fresh herbs for garnish

Instructions

  1. Brown the beef stew meat in a skillet over medium heat for about 5 minutes.
  2. Add the beef to the crockpot along with the beef broth, chopped vegetables, diced tomatoes, Italian seasoning, salt, and pepper.
  3. Stir everything well and cover the crockpot.
  4. Cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.

Notes

Chop veggies into similar sizes for even cooking. Can use turkey instead of beef for a lighter version.
