A rich and flavorful soup combining tender chicken, roasted poblano peppers, and black beans in a creamy broth – perfect for chilly days.

Ingredients

  • 2 chicken breasts, cooked and shredded
  • 2 poblano peppers, roasted and chopped
  • 1 can black beans, rinsed and drained
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional toppings: cilantro, cheese, sour cream

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and garlic, cooking until they are soft.
  2. Stir in the roasted poblano peppers and cook for another 2 minutes.
  3. Add the shredded chicken, black beans, cumin, salt, and pepper. Mix well.
  4. Pour in the chicken broth and bring to a simmer.
  5. Lower the heat and stir in the heavy cream.
  6. Let the soup simmer for about 10-15 minutes. Adjust seasoning if needed.
  7. Serve hot with your favorite toppings.

Notes

For a creamier texture, blend some of the soup before serving. Store leftovers in an airtight container for up to three days.
