A delightful twist on a classic flavor combination, blending the comforting taste of French onion soup with buttery rice.

  • 1 cup rice (any variety)
  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 2 cups vegetable or chicken broth
  • Salt and pepper to taste
  • Optional: fresh herbs for garnish

Instructions

  1. In a large skillet, melt butter over medium heat. Add sliced onions and stir well.
  2. Cook the onions slowly for 15-20 minutes, stirring occasionally, until they are caramelized and golden brown.
  3. Add the rice to the skillet, stirring to coat it evenly with the onions and butter.
  4. Pour in the broth and bring it to a boil. Once boiling, reduce the heat to low and cover the skillet.
  5. Cook for 15-20 minutes, or until the rice is tender and has absorbed the liquid.
  6. Season with salt and pepper to taste. Fluff the rice with a fork before serving.

Notes

Using a heavy-bottomed skillet can help prevent the rice from sticking. Reheat in a skillet adding a splash of broth to keep it moist.
