Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 bell pepper, chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • Fresh herbs (like parsley or thyme), for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook for about 5-7 minutes until they begin to soften.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the zucchini and bell pepper to the pot, cooking for another 5 minutes.
  4. Stir in the diced tomatoes and vegetable broth. Add salt and pepper to taste.
  5. Bring to a boil, then reduce heat and let it simmer for about 15-20 minutes, allowing the flavors to meld together.
  6. Ladle the soup into bowls and garnish with fresh herbs if desired.

Notes

Cut veggies into uniform sizes for even cooking. For a creamier texture, blend a portion of the soup with an immersion blender.
