Ingredients

8 oz fettuccine (or pasta of choice)

2 tablespoons butter

3 cloves garlic, minced

3/4 cup canned pumpkin purée

1 cup heavy cream

1/2 teaspoon salt

1/4 teaspoon ground nutmeg

1/4 teaspoon black pepper

3/4 cup freshly grated Parmesan cheese

1/4 cup reserved pasta water (as needed)

Fresh thyme or sage (optional, for garnish)

Instructions

1. Cook pasta according to package directions. Reserve 1/4 cup pasta water before draining.

2. In a large skillet, melt butter over medium heat. Add garlic and sauté until fragrant (about 1 minute).

3. Stir in pumpkin purée and cook for 1 minute until warmed through.

4. Pour in heavy cream, salt, nutmeg, and pepper. Stir to combine and simmer gently for 3–5 minutes.

5. Add Parmesan and stir until melted and sauce thickens. Add reserved pasta water if needed to loosen the sauce.

6. Toss cooked pasta into the sauce until evenly coated. Simmer 1–2 minutes.

7. Serve warm, garnished with herbs and extra Parmesan.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days.

To reheat, warm slowly on stovetop with a splash of milk or cream.

Add grilled chicken, shrimp, or roasted veggies for variation.
