A warm, hearty soup bursting with flavor, perfect for chilly nights or whenever you crave something cozy.

Ingredients

  • 1 pound ground beef (or turkey)
  • 1 packet taco seasoning
  • 1 can diced tomatoes (with green chilies)
  • 1 can corn (drained)
  • 1 can black beans (drained and rinsed)
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Drain excess fat if necessary, then add taco seasoning and cook for another minute.
  3. Stir in the diced tomatoes, corn, black beans, and chicken broth.
  4. Bring everything to a boil, then reduce heat and simmer for about 10-15 minutes.
  5. Remove the pot from heat and stir in the sour cream until well blended.
  6. Top with shredded cheese if desired and serve hot!

Notes

For a vegetarian version, swap out the meat for more beans or lentils, and use vegetable broth. Can be made dairy-free with coconut cream.
