Ingredients

  • 1 pound of chicken breast (or rotisserie chicken)
  • 1 can of black beans, drained and rinsed
  • 1 can of corn, drained
  • 1 packet of taco seasoning
  • 4 cups of chicken broth
  • 1 cup of cream (or coconut milk for dairy-free)
  • 1 cup of diced tomatoes (fresh or canned)
  • Optional toppings: tortilla chips, cheese, sour cream, avocado

Instructions

  1. In a large pot, combine the chicken, chicken broth, black beans, corn, diced tomatoes, and taco seasoning.
  2. Bring the mixture to a boil and then reduce the heat. Let it simmer for about 15-20 minutes.
  3. If using raw chicken, remove it once cooked, shred it, and return it to the pot.
  4. Stir in the cream and let the soup heat through for another 5 minutes.
  5. Serve hot with your favorite toppings.

Notes

For a lighter version, use Greek yogurt instead of cream. Swap chicken with beans for a vegetarian option or use low-sodium broth for a healthier choice. Can be made in a slow cooker on low for 6 hours.
