A comforting bowl of chowder made with chicken, tender potatoes, and sweet corn, perfect for chilly evenings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups potatoes, diced
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 onion, diced
  • 2 cups chicken broth
  • 1 cup milk
  • 2 tablespoons butter
  • Salt and pepper, to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion and sauté until translucent.
  2. Stir in the diced potatoes and corn, cooking for about 5 minutes.
  3. Pour in the chicken broth and bring it to a boil. Reduce heat, cover, and let simmer for 15 minutes or until potatoes are tender.
  4. Add the shredded chicken and milk, stirring gently. Season with salt and pepper.
  5. Allow it to heat through for another 5 minutes, then serve hot.

Notes

For a creamier texture, consider blending a bit of the chowder and then mixing it back in. This chowder also freezes well for longer storage.
