Warm and comforting Chicken and Wild Rice Soup combines tender chicken, earthy wild rice, and a medley of vegetables for a wholesome meal that everyone loves.

Ingredients

  • 1 lb chicken breast or thighs, cooked and shredded
  • 1 cup wild rice, rinsed
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 1 cup mushrooms, sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup heavy cream (or milk for a lighter option)

Instructions

  1. In a large pot, heat a little oil over medium heat. Add onions, carrots, and celery; sauté until softened.
  2. Stir in the mushrooms and cook for another 3–4 minutes.
  3. Add the shredded chicken and wild rice to the pot.
  4. Pour in the chicken broth and season with garlic powder, thyme, salt, and pepper. Bring to a simmer.
  5. Cook for about 40 minutes, or until the wild rice is tender.
  6. Stir in the heavy cream just before serving.

Notes

For a creamier soup, add the cream towards the end of cooking. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
