Ingredients

  • 1 small head of cabbage, chopped
  • 2 carrots, diced
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes (14 oz)
  • Salt and pepper to taste
  • Optional spices: cumin, chili powder, or bay leaf

Instructions

  1. Prepare your ingredients: Chop the cabbage, dice the onions and carrots, and mince the garlic.
  2. Sauté the vegetables: In a large pot, heat a splash of olive oil on medium heat. Add the onions, garlic, and carrots. Sauté for about 5 minutes until the onions are translucent.
  3. Add in the cabbage: Stir in the chopped cabbage and cook for another 5 minutes, until it starts to wilt.
  4. Pour in the liquids: Add the diced tomatoes and vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes.
  5. Season it up: Taste the soup and add salt, pepper, and any optional spices you prefer. Let it cook for an additional 5 minutes.
