A warm and wholesome butternut squash soup that’s packed with nutrients and comforting flavors, perfect for cool evenings.

Ingredients

  • 1 medium butternut squash, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup coconut milk or cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: herbs like thyme or sage for added flavor

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, cooking until soft.
  3. Stir in the diced butternut squash and cook for a few more minutes.
  4. Pour in the broth, bring to a boil, then reduce heat and simmer until the squash is tender (about 20 minutes).
  5. Use an immersion blender to puree the soup until smooth (or blend in batches in a regular blender).
  6. Stir in the coconut milk, and season with salt and pepper to taste.

Notes

For a creamy texture, blend the soup thoroughly. Store in an airtight container for up to one week.
