Broccoli Cottage Cheese Bake

A creamy and cheesy casserole that combines broccoli, cottage cheese, and cheddar, perfect for weeknight dinners or potlucks.

  • 4 cups broccoli florets
  • 1 1/2 cups cottage cheese
  • 2 large eggs
  • 1 cup shredded sharp cheddar cheese, divided
  • 1/2 cup grated Parmesan (optional)
  • 1/3 cup plain breadcrumbs or panko
  • 2 tablespoons melted butter or olive oil
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • Salt and black pepper to taste
  • A pinch of nutmeg (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Bring a pot of salted water to a boil. Blanch broccoli for 1–2 minutes until bright green and slightly tender. Drain and shock in cold water. Pat dry.
  3. In a large bowl, whisk eggs. Add cottage cheese, 3/4 cup shredded cheddar, Parmesan (if using), chopped onion, garlic, salt, pepper, and nutmeg. Fold in the drained broccoli.
  4. Transfer mixture to the prepared dish. Sprinkle breadcrumbs and the remaining cheddar over the top. Drizzle melted butter or olive oil over crumbs.
  5. Bake for 20–25 minutes, until the center sets and the top turns golden. Let rest for 5 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. For longer storage, freeze for up to 2 months.
