Ingredients

  • 2 cans of black beans (rinsed and drained)
  • 1 onion (chopped)
  • 2 cloves of garlic (minced)
  • 1 bell pepper (chopped)
  • 4 cups of vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Optional toppings: sour cream, cilantro, avocado

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, and bell pepper. Sauté until soft, about 5 minutes.
  3. Stir in the cumin and chili powder. Cook for another minute.
  4. Add the black beans and vegetable broth. Bring the mixture to a boil.
  5. Reduce the heat and let it simmer for about 20 minutes.
  6. Use a blender or immersion blender to blend the soup to your desired consistency. Season with salt and pepper.
  7. Serve hot with your favorite toppings.

Notes

For a creamier soup, blend more or all of it. Store in the fridge for up to 5 days or freeze for up to 3 months.
