A comforting and hearty soup featuring tender beef, macaroni, and a flavorful broth, perfect for cozy evenings or busy weeknights.

  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 cup macaroni pasta
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add chopped onion and minced garlic, cooking until softened.
  3. Pour in the beef broth and diced tomatoes. Stir to combine.
  4. Bring the mixture to a boil, then add the macaroni and Italian seasoning.
  5. Reduce heat and simmer for about 10-12 minutes, until the pasta is tender.
  6. Season with salt and pepper to taste. Serve hot, garnished with parsley if desired.

Notes

Use a heavy-bottomed pot for even cooking and prevent sticking. Store leftovers in an airtight container for 3-4 days, or freeze for up to 3 months.
