A simple and elegant dessert combining sweet, tart, crunchy, and creamy flavors, perfect for weeknight dinners or small gatherings.

  • 3 ripe but firm pears (Bosc, Anjou, or Bartlett), halved and cored
  • 1 cup mixed berries (fresh or frozen; blueberries, raspberries, or blackberries)
  • 2 tablespoons honey (plus more for drizzling)
  • 3 tablespoons chopped walnuts
  • 23 ounces blue cheese, crumbled (gorgonzola or local blue)
  • 1 tablespoon lemon juice
  • 1 tablespoon butter or neutral oil
  • Pinch of salt
  • Freshly ground black pepper
  • Optional: a splash of vanilla or a pinch of cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment.
  2. Halve and core the pears. Brush the cut sides with lemon juice to prevent browning.
  3. Place pears cut-side up on the sheet. Dot each half with a bit of butter or oil.
  4. Scatter the berries into the hollowed centers and around the pears.
  5. Sprinkle chopped walnuts over pears, then drizzle honey across everything.
  6. Roast for 18–25 minutes, until pear flesh yields to a skewer but still holds shape.
  7. Remove from oven and let cool slightly. Crumble blue cheese over warm pears.
  8. Finish with a final drizzle of honey and a pinch of black pepper. Serve warm.

Notes

Use ripe-but-firm pears for better texture. Store cooled pears in an airtight container for up to 3 days.
